With almost 200 allowed additives that are legally permitted in wine, we choose to feature some very exclusive bio-dynamic, bio-organic and organically sustainable wines that complement our food at Plaka. Our wines from the North, East, and South side of Adriatic Sea, have the least possible use of chemicals, additives and overly technological procedures. The ovenance of these wines are accountable and accurate.

      2008 Sumenjak
      Grapes: 50% Chardonnay, 50% Renski Rizling
      Alcohol Content: 13.0% Vol

      Fermentation was held for 3 days in an open vat and maturation in a wooden barrel. After a two-year maturing wine was bottled without filtration. It has a golden color with amber hues. Intense aroma of fruit and nuts petroleum, perceived as flint. Wins very complex, tasty, with a nice fresh mineral acid and a long, rich aftertaste.

      Some unripe aromas of dried herb and green curry give this northern Italian (unfiltered) merlot a spicy, tangy feel in the mouth. There's a touch of acidity followed by blackberry and forest floor.

      A demi sec red sparkling wine. The base wine is made by a special process to extract colour from skin contact. Spends at least two years on lees.

      Alcohol Content: 13.5% Vol

      Deep red colour with chestnut coloured tints. Complex bouquet, with prevailing aromas of dried fruit, like tomato and fig. Further examination will reveal notes of wood and police. A robust wine with a rich body, which maintains an insistent but calm aggression, due to its tannins.

      This blend of Xinomavro, northern Greece's most noble variety, with merlot produces a harmonius red wine with a lush aroma of chocolate, coffee, pepper, cinnamon and a fine oak. The body is intense and full of plum flavors, red fruit marmalade and berry with a balanced finish.

      Deep red wine with an intense bouquet, dominated by aromas of red forest fruit, sweet ageing aromas, like cinnamon, clover, cocoa, matched harmoniously with the aromas of oak barrels and roasted nuts. An exquisite structure, rich body, volume, greasiness, a long duration in taste and aroma.

      Alcohol Content: 14.0% Vol

      The bordeaux elements are immediately apparent with bell pepper notes from the cab sauvignon, weighty body of the wine. Minor mineral touches as it breathes, but everything is more predominated by leather and balsamic notes.

      Alcohol Content: 13.5% Vol

      From the compelling herbal aroma to the generously textured fruit, this melds the best elements of the merlot (60 percent of this blend) with cabernets sauvignon and franc and a small addition of petit verdot (4 percent). It's a dark and savory as a digestif of herbal bitters, balanced by dark fruit that lasts with freshness. Decant it for venison or other robust game.

      Grapes: 25% Chardonnay, 25% Sauvignon, 25% Tocai Friulano, 10% Ribolla Giala, 5% Picolit, 5% Verduzo, 5% Pinot Bianco
      Alcohol Content: 12.5% Vol

      Paraschos are not using chemical fertilizers, herbicides and pesticides. The grape is fermented with the skins for 5 days in open vats the wine matures on the lees for two years in large oak casks. Undergoes clarification, filtration or addition of sulfur anhydrides. The wine is great quality. The nose shows a great variety of flavors "held together" by a deep minerality; ripe peach, candied apricot, citrus, mango, white flowers, herbs, ginger and dried fruit. Rich and full bodied when tasted almost salty and very fresh, it is a wine of great complexity of taste and smell and long finish that leaves memories minerals, exotic fruit and citrus.

      The color of a tropical sunrise, this gained its orange hue from 30 days macerating on the skins. It starts with light floral aromas and densely textured flavors of peach and apricot edged in savory herbs and roasted nuts. More intense aromas appear after exposure to air - Orange blossom, beeswax and tangerine.

      Bright yellow-gold, with a typical rich aroma imparted by the resin of halkidiki pines; typical rich taste, soft, cool with a spicy aftertaste; dry, with an elegant retsina 'bite'.

      Yellow-white color, with aromas of exotic and citrus fruits, green apple, peach and grapefruit. A refined wine, zesty with an intense metallic character, a rich body wonderfully balanced taste and a long and strong aromatic aftertaste.

      The wine is made in a traditional way with natural alcoholic and malolactic fermentation and long maturation on natural yeast, the wine is not filtered with ver low use of sulphites. Generous creamy texture, quite fat but without sacrificing freshness. Trademark nuttiness on the finish.

    • 2014 Burja, Zelen - Slovenia

      Alcohol Content: 11.5% Vol

      "Zelen" means "Green" in Slovenia. Zelen grapes have a richly colored pulp and if the must it isn't filtered., the color of the wine will range from a deep yellowish green to a stunning emerald green. Is an almost extinct grape typical of the Vipava Valley. Fruity, waxy, with hints of citrus zest and an enticing salinity.

    • 2011 Kabaj, Ravan - Slovenia

      Grapes: 100% Tocai Friulano
      Alcohol Content: 12.5% Vol

      Ravan is a regional name for Tocai Friulano, which must now be known as sauvignon vert in Europe. Naturally-grown grapes ar hand harvested, fermented and matured in used oak 12 months. A true sense of the varietal is present with herbal notes and a proper citrus tang. The finish is pleasantly astringent with lingering flavors of hazelnut.
